Ingredients
- 1 (15-oz.) box Raisin Bran
- 3 cups Sugar
- 5 cups All-Purpose Flour
- 5 teaspoons Baking Soda
- 1 tablespoon M-K Pumpkin Pie Spice
- 2 teaspoons Salt
- 4 Eggs, beaten
- 1 cup Margarine, melted
- 1 quart Buttermilk
- 2 tablespoons M-K Pure Vanilla Extract
Directions
- In a large bowl, mix together the Raisin Bran, sugar, all-purpose flour, baking soda, salt, and M-K Pumpkin Pie Spice.
- Add the beaten eggs, melted margarine, M-K Pure Vanilla Extract, and buttermilk to the dry ingredients. Mix well until all the ingredients are thoroughly combined.
- The batter can be stored in a covered container in the refrigerator and used as needed. It will keep in the refrigerator for up to six weeks.
- To make muffins, preheat your oven to 400°F.
- Fill greased muffin pans about 2/3 full with the muffin batter.
- Bake in the preheated oven for 15 to 20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
