Ingredients

  • 1/2 cup All-Purpose Flour or Cornstarch
  • 3 Eggs, slightly beaten
  • 2 cups Fresh Bread Crumbs
  • 1/2 teaspoon Salt
  • 1 tablespoon M-K BAM!
  • 1 small Zucchini
  • Vegetable Oil

Directions

  1. Cut the small zucchini crosswise into slices about 1/4 inch thick.
  2. In a small bowl, combine 1/2 teaspoon of salt with the beaten eggs. Set this egg mixture aside.
  3. In another small bowl, combine the fresh bread crumbs with M-K BAM!. Set this breadcrumb mixture aside.
  4. Place the all-purpose flour or cornstarch in a third small bowl.
  5. Dip each piece of zucchini first in the flour or cornstarch, ensuring it’s coated, then dip it into the egg mixture, and finally, coat it with the breadcrumb mixture. Allow the coated zucchini to dry a bit while you prepare the oil.
  6. In a heavy skillet, heat about 1/2 inch of vegetable oil to 375°F (190°C).
  7. Fry the coated zucchini in batches for approximately 1 minute on each side or until they are golden brown and crispy.
  8. Use a slotted spoon to remove the fried zucchini slices from the hot oil and place them on paper towels to drain any excess oil.
  9. Lightly sprinkle the fried zucchini with additional salt if desired.
  10. Serve the Deep Fried Zucchini as a delicious and crunchy snack or appetizer.
